This video is really helpful and shows you step by step what your cake should look like, the way to put a crumb coat on, the final layer of frosting, and then how to smooth it out with a Viva paper towel. This can get your cake so smooth that it looks like fondant!

ReplyDeleteThis will definitely work with other frosting recipes but you need to make sure it is thin! Since the frosting is only in the freezer for 15 minutes it doesn't affect the taste. Putting it in the freezer just helps you to put the next layer of frosting on and then when you are smoothing with the paper towel it helps it to not stick. By the time you are finished decorating it and it's ready to serve, the frosting isn't frozen any more :)

ReplyDeleteI use a Viva paper towel because it doesn't have a design on it, but if you wanted a specific design to add some texture to the buttercream you could try a different brand of paper towel!

DeleteI did this before but the buttercream keep on sticking to the towel.is there a certain room temperature requirement? Coz here in philippines weather is so frustrating for cakes specially fondants.that's why i would prefer on buttercream, but i wanted to look like fondant. Any advice? Thank you.
ReplyDeleteYou need to make sure that you put the cake in the freezer for about 10-15 minutes to let the frosting get hard and then you can use the paper towel :) I bet the weather makes it very difficult!!

ReplyDeleteYou could be pressing hard, but the key is to let the frosting harden in the freezer for 10-15 minutes. That way it's not frozen, but you will still be able to mold it so it will be super smooth!

DeleteYou have to use a good quality paper towel - some of the cheaper ones will unfortunately leave bits, if your icing isn't frozen well enough.

Does it have to be butter cream frosting??
ReplyDeleteIt doesn't have to be buttercream, just make sure that your frosting will be able to form a "crust" so that the paper towel won't stick to the icing.
DeleteI have did this Many of time & each time I do it works great until after an hour in the freezer I put viva paper towel and it smears!! If I just smooth it out with a long thick knife it works better than the towel. Do you know why this keeps on happening to me?

ReplyDeleteHave you ever thought about using an offset spatula? Its what the professionals use, and it really would make a lot more sense for you to use that instead of the straight spatula you are using.
ReplyDeleteThis is a great tutorial for beginners but as a professional, using an offset will give you the same result. You don't even need the paper towel which can shed into the frosting.

ReplyDeleteI've used this technique for years and have loved it! Some never will believe me that it's not fondant. I use high ratio shortening and brite white in my buttercream and this leads to not needing the freezing process unless it's unusally humid (well, for Oregon)

ReplyDeleteHi! This is Brooke's mom responding since Brooke is gone for 18 months. I know that it is important to use Viva paper towels and to only use homemade buttercream frosting. The frosting has to form a crusty layer and the store bought frostings don't do that. The Viva paper towels don't have a pattern and are thicker so they work the best.

I'm not aware of any cream cheese frosting recipes that crust. However, if you put some LorAnn "cheesecake" flavor oil in buttercream, it will taste enough like cream cheese icing to go well with red velvet. :)

ReplyDeleteI made this frosting today and used Viva paper towel technique, "It worked" I colored my frosting into blue using Wilton royal blue color. First I thought, the frosting wouldn't work since it was little thicker than yours but cleaning my spatulas with hot water and paper towel, man it did work. I am very very happy. Thank you so much
ReplyDeleteThis may have been stated in previous comments...I didn't read them all. Sometimes you have a cake that would just be too large to fit in the freezer. Just let it sit after you crumb coat until it is dry to the touch...not tacky...then add your final coat. And also let it dry to the touch before you use the paper towel and it won't stick to the frosting. Never heard of putting the cake in the freezer...this will help on a humid day!

ReplyDeleteI believe that is only if you are not using her buttercream recipe. Other frostings are too soft and so they need to set out to form a crust first.
